How do we use microscopic forms of life?

We use bacteria and fungi to make food and  for other useful purposes. Yeasts are used to ferment alcohol, while the bacteria living in milk change it into yoghurt. Moulds give some cheeses their characteristic colour and taste, and even the soy sauce used in Chinese cooking is made by fermenting soya beans. Experiments are taking place using specially bred bacteria to break down waste materials and to clear up oil spills on beaches. Microscopic algae and bacteria are used to break down sewage and make it harmless.
